Zucchini & Chickpea Fritters (Gluten Free, Vegan)
     
Serves: 2-3 (around 15 fritters)
 

Ingredients:

(Fritters)
500g grated Zucchini
100g Chickpea Flour
½ tablespoon Carwari Organic Hulled White Tahini
1 tablespoon Carwari Organic Sesame Dipping Sauce –Flakes
1 tablespoon Ground Cumin Seed
1 teaspoon Baking Powder
Olive oil
Flat leaf parsley & Lemon as garnish
(A) – Egg substitute
1 tablespoon Carwari Organic Chia Seed
2 tablespoons water

(Tahini & Lemon Sauce)

2 tablespoons Carwari Organic Hulled White Tahini
1 tablespoon Lemon Juice -freshly squeezed
2 tablespoon Water
1-2 garlic cloves –minced
A pinch of salt

nstructions:

(Fritters)
1. Mix (A) into a large bowl and leave around 15 minutes to form a gel.
2. Put all other fritter ingredients into 1 and mix it until well blended.
3. Heat Olive oil in a pan. Scoop tablespoon of batter for each fritter. Cook until golden, about 3 minutes per side.

(Tahini & Lemon Sauce)
Mix the tahini, lemon juice, water and minced garlic and put salt to taste.
