Soba Noodle Salada – Wafu and Carwari collaboration recipe
     
Dairy and Egg Free. A non-refined sugar recipe
Serves: 2-3

Ingredients:

200-250g Soba buckwheat noodle
2-3 pieces mushrooms, Sliced
200-300g Green beans or Asian green such as Bokchoy, Cut into bite size
20-30g Tofu, Hand mushed
Lettuce or Rocket leaves

(Sauce)
1 Sachet of Carwari Instant Miso Soup Paste
10ml of Carwari Rice Vinegar
5ml of Carwari Ex. Virgin Black Sesame Oil
2.5-5ml of Carwari Agave Nectar (if you prefer a sweeter taste) 45g Cooked Quinoa

(Garnish)
Carwari Tamari Almond
Carwari Brown Rice Snack
Carwari Toasted Sesame Seeds

Directions:
1. Boil Soba Noodle according to the direction of package.
2. Add blanched green beans or Asian vegetables 30 seconds before draining the Soba Noodles.
3. Rinse the Soba Noodles and vegetables under running cold water.
4. Place Miso paste, Rice Vinegar, Black Sesame Oil and Agave Nectar in a large bowl and mix well.
5. Add the Soba Noodles, Mushrooms, Quinoa and blanched vegetables and toss together.
6. Place Lettuce on a plate and place the noodles on top.
7. Sprinkle mashed Tofu, Tamari Almond, Brown Rice Snack and Toasted Sesame Seeds.

Note:
*If you like soy flavor instead of miso, replace with 25ml of Carwari Tamari Soy Sauce, 10ml of Carwari Ex.Virgin Black Sesame Oil, 20ml of Carwari Agave Nectar and 30ml Carwari Rice Vinegar.
*If you like rich flavours or a dairy lover, replace Tofu with Chicken or Cheese.
