Carrot Cake (Macrobiotic Version)

Ingredients:

100g of medium-strength flour or organic flour
50g of whole-wheat flour of whole grain
1 and 1/2 tablespoons of baking powder
60g of beet syrup or maple syrup
80ml of apple juice
50ml of rapeseed oil
1 tablespoon of Carwari Organic Roasted Sesame Seeds (ground mix)
A pinch of salt
100g of carrot
20g of almond

Direction:

  1. (Mix up the flour and baking powder.
  2. Grate the whole carrot
  3. Toast almond for a short time and chop it finely.
  4. Mix the beet syrup (or Maple syrup), the apple juice and the rapeseed oil. Add grated carrot and Carwari Organic Roasted Sesame Seeds and 3.
  5. Put 1 into 4 and mix them just before steaming it.
  6. Steam it in a boiled steamer for 15 minutes. Check it with a skewer to see if it is cooked properly.
   
This recipe is provided by Ms Yasuko Ojima who is a nutritionist specializing Macrobiotic. She stayed in Australia from 1997 to 2004 and attained a diploma from Nature Care College in Sydney.
